Music Themed Cake Balls - March 2014

My son's band was having a cake ball sale; so I made these music themed cake balls to donate to it.

I used white candy melts to pipe the music notes, treble clefs, and bass clefs out onto parchment paper.  I let them harden and they were ready for when I needed them to decorate the cake balls.

To make the basic cake balls I followed Bakerella's instructions.  You can find them here.

Right after dipping the cake balls I topped them with some yellow nonpareil sprinkles and one of the white music themed candy decorations.  You have to be ready and work quickly so the chocolate doesn't harden before you get everything on it.

Pink Heart Cake Balls - February 2014

I made these cake balls for a good friend whose grandfather had passed away.

I used a #3 round tip to pipe pink candy melts onto parchment paper in heart shapes.  I filled a few of them in, but most were just the outline.  I let them harden and set so they were ready when I started dipping the cake balls.

Right after dipping the cake ball I placed a pink heart on top.  If it starts to slide a little just hold it in place for a second.  Have your decorations ready and be quick so you get them placed before the chocolate hardens; it looks nicer that way.  If you don't get it on in time though you can dot a little chocolate on top the cake ball and attach it that way.

Here are a few extras that I decorated differently.

For the cake balls in the picture above I had to hold the hearts in place until the chocolate hardened enough to hold them upright on their own.

Music Note Cake Balls - January 2014

My son's band was having a cake ball sale; so I made these music themed cake balls to donate to it.

I used black candy melts to pipe the music notes out on to parchment paper.  I let them harden and they were ready when I needed them to decorate the cake balls.

Right after dipping the cake balls I sprinkled some yellow sanding sugar sprinkles on top, and then placed a music note on top standing straight up.  You have to be ready and work quickly so the chocolate doesn't harden before you get everything on it.  I had to hold the music note in place until the chocolate hardened enough to hold it upright on its own (a couple ended up a little crooked :/).  I had to be careful when handling the music notes as the stems were a bit fragile.  I had a couple snap, but thankfully I was able to repair them or replace them with extras I had made.

I thought the cake balls turned out very nicely, and the bake sale was a success!  Yay!  :)

Thanksgiving Cake Balls - November 2013

These are some cake balls I made for a dessert for Thanksgiving.  I used the 'cake scraps' I had left from leveling the cakes that I used to make my daughter's Peter Pan cake.

Pigeon Cake Pops and Light Blue Cake Balls - November 2012

So, after I made Carissa's Mo Willems themed birthday cake and her Pigeon Cupcakes to celebrate her birthday at school, I decided to use the leftover cake to make Pigeon Cake Pops and some Cake Balls for us to enjoy at home.  [I'd made cake balls before, but this was the first time I'd made cake pops, definitely a bit tricky.  These were just for fun, and good thing because some of them came out pretty funny looking, a couple aren't even pictured here.  :) ]

To make these Pigeon Cake Pops I started with the recipe found on Bakerella's website for cake pops (using light blue candy melts for my coating).
 
After the step where you dip the cake pop into the candy melts to coat it, I inserted yellow candy coated sunflower seeds into the candy coating to be the beaks.  (For the bottom half of the beak, I cut a little of the end off the sunflower seed, so it would be a little shorter than the top one.)  You have to insert the beaks quickly before the candy coating hardens.  On the cake pops with the smaller candy eyeballs (made by Wilton) I also had to put the eyes on each side before the coating hardened.  So, make sure you have everything set out and ready for each cake pop, so you can grab it and put it on quickly after you dip the cake pop.
 
For the cake pops with the larger flatter eyes I waited until the candy coating was hardened (still put your beaks on before the coating sets), and then I piped on the eyes with some white candy melts.  To get the white candy melts ready to pipe on, I heated them per the instructions on the package and put some in a piping bag with a round tip (I think it was a #3).  After the eyes hardened I used black food coloring to paint the pupils on the eyes.  On the last cake pop pictured with this type of eye, I just used one sunflower seed to make the beak.  I used a black food marker to make the line on that beak.
 
The kids enjoyed seeing the finished product.  They enjoyed eating the finished product even more, and even the funny ones still tasted good!  :)
  
 
I only ended up making about 7 Pigeon cake pops, so below are the cake balls that I made as well.

To make these cake balls, I just used the recipe found on Bakerella's website for cake balls.  These were chocolate cake mixed with vanilla icing, and I used light blue candy melts for the coating, topping them with white crystal sugar sprinkles before the candy coating hardened.

Peppermint Frost Cake Balls - November 2011

I made these peppermint cake balls for a cookie/treat exchange that my mom was hosting.

My mom was over while I was making them and she mentioned something about peppermint frost, I thought it was cute, so I named the recipe Peppermint Frost Cake Balls.  :)

(I followed the basic recipe and process for making cake balls from Bakerella's website found here; I just changed it how I needed to make it work for my peppermint cake ball recipe.)

To make them you will need:
-1 box classic white cake mix (cook as directed on the box for a 13x9 cake)
-1 can cream cheese frosting (16 oz.)
-1 package chocolate flavored almond bark
-peppermint candies
-red food coloring
-wax paper or parchment paper

1. After the cake is cooked and cooled completely, break it in pieces into a large bowl.  You can use a fork to help get it broken up.

2. Start out by mixing ¾ of your frosting thoroughly with your cake crumbs.  I use a big metal spoon to smush it all together.  Roll one ball to test, then decide if you need to add more frosting.  [It should be moist and stay together, but you don’t want it to be gloppy.]  Some people use their fingers to mix it together, but it gets messy.

3. Get about 8-10 peppermint candies and crush them into a fine powder [you’ll have some bigger pieces which you can use later to top the cake balls.]

4. Mix the peppermint powder into your cake ball mixture to taste.

5. Divide the cake ball mixture into 2 bowls.  Add the red food coloring to one bowl until you reach the desired shade you want.

6. Take equal parts of the mixture from each bowl, roll it into quarter size balls, and lay on cookie sheet [I line mine with wax paper or parchment paper].  [This recipe should make 50-60 cake balls depending on the size you roll them.]

7. Chill them for several hours. [You can speed this up by putting them in the freezer – that’s what I usually do. :)]

8. Melt the chocolate in a bowl in the microwave according to the directions on the package.  [I only melt a few pieces of chocolate bark at a time because it starts to cool and thicken, and it’s easier to work with when it’s hot.]

9. Put one cake ball at a time in the chocolate.  [Use a spoon to cover the top of the cake ball and then get it on the spoon and tap off the extra chocolate.]

10. Lay it on wax or parchment paper and top immediately with your crushed peppermint.  Then wait until they are firm.  If your chocolate gets firm before you top it with the peppermint you can put a little of the chocolate on the top and put the peppermint on, it just won't have as smooth as a look to it.

Since I was making these for an exchange I plated a 1/2 dozen cake balls each on cute red square plates with a peppermint in the middle and wrapped the plate with plastic wrap.
